Rule for waiting at a table / Rule for Service

 Rule for waiting at the table:-        


    Before guest arrival :-

   • Report (15 minutes) before time in order to study any menu changes and for briefing.

   • As soon as station is allocated check your station for cleanliness and whether the covers and sideboards are complete.

  • When in restaurants stand erect ,with the waiters cloth hanging evenly on the hand .   

      At arrival guest :-

   • When the guest come to your table greet them politely and help them to be seated , pulling chairs especially for ladies , Children and Old age people .

   • Fill the glasses with iced water or normal water as per guest required and present the menu .


      After guest has left :- 

    • Ready the table as per standards for next guests .

       General rules for service :-

    • If table is set for more person than the actual number sitting ,clear the extra covers .

    • Adjust cover as per order e.g. If soup spoon is kept on cover and guest does not order soup , then remove the soup spoon before starting the service .

   • If any piece of cutlery fall on the floor replace witha clean one .

   • Check that crockery and glassware being used is not chipped or cracked .

   • When about to serve , if the guest has his hands on the cover say ‘ excused me sir / madam ’ .

 •  Serve ladies first and then the man  . Serve anti - clockwise .

 • Serve food in proper sequence of the menu , checking to see that proper cutlery is in place .

 • Serve all accompaniments and sauces required for particular course .

 • See that hot dishes are served on hot plates and cold dishes on cold plates .

• Handle glasses from the base / stem ,and cups from the handle . Handle cutlery from the base and plate from the rims preferably using waiters cloth for both .

• Do not fill glass or cup to the rim .

• Use under plate e.g. Quarter plate under ice - cream cup .

• Time the service of food properly so that there is no time lag between the course .

• All food items to be served from the left and beverage from the right except pre- plated food , which is also , serve from the right .

• All clearing to be done from the right .

• After the main course crumb the table using a quarter plate / half plate with the waiters cloth folded into a pad .

• After the food course , clear the table except water glasses , ashtray and dessert cutlery .

• Take the order for sweet and serve it .

• After the meal ,ask for tea / coffee and serve .

• Present the bill when requested ,inside a bill folder with a pen .

• Refill the water glasses whenever  the level falls below half .

• Light quest cigarettes when required, without their asking .

• Be friendly and helpful. 

        When guest leaves :-

 • Draw out chairs especially for ladies and children .

• Thank guest for the visit and wise as per time of the day .
