Cider and Perry.

Cider:-

            Cider is an alcoholic drink obtained by fermenting the juice of cider apple .It is also legally permitted to make cider from the mixture of apple juice and pear juice, the latter being the maximum of 25% in the mix. Cider apples have sugar ,acid and tannin in perfect composition, thus making it suitable for cider preparation.
     
               Somerset ,  Dorset ,Devonshire , and Herefordshire counties of the UK and Normandy and Brittany of France are well known areas for the production of cider.


          


Cider making :-

     Selected fresh cider apple are thoroughly washed and crushed in the mill to make a pulp known as pomace. The pomace is wrapped in a coarse cloth to form a cheese and then it is pressed to obtain juice. The juice is transferred to a vat for fermentation with the addition of yeast . The fermented liquid is called cider. The cider is brightened or clarified by applying centrifugal force which spins the cider and removes all the suspended particles. The cider is matured for a few weeks and blended before selling .

Types of cider:-

  •  Draught Cider:- Draught cider is usually unfiltered and has a dosage of yeast and sugar to induce fermentation which gives sparkle to the product. It is termed as cask conditioned cider . It is slightly sweet with sparkle . If it is completely drt ,it is known as  scrumpy  or farmhouse cider.
  • Keg Cider:-  It is a pasteurized and filtered cider which is usually carbonated and sweetened ,it is very brilliant in appearance.
  • Bottled Cider:- It is a Pasteurized and filtered cider bottled with dosage of yeast and sugar to induce secondary fermentation in the bottle or impregnated with CO2 gas. Secondary fermentation may be induced in closed tanks and bottled with gas. This drink has effervescence and it is termed pomagne. Bottled Cider are marketing as ‘Vintage’ or special, which is means that the products are of one year and high quality of cider.  The strength of cider various from 1- 8.5% and any cider higher than 8.5% alcohol is termed apple wine.

Perry:-

         Perry is an alcoholic drink obtained by fermenting the juice of pear. It is made the same way as cider. In the production of Perry ,cider juice,up to a maximum of 25% ,can be mixed . Perry is carbonated either by tank method or direct impregnation method.

 Conclusion:-

       Cider and Perry are fermented drinks. Cider is made from the juice of apple and it is permitted to add up to 25% pear juice while making cider . Perry is produced from pear juice and it is allowed to mix up to 25% apple juice to Perry . Cider and Perry are available as still or sparkling variety with dry or sweet taste. They are marked in casks and bottles.
